A few months ago I assisted at a Thermomix cooking class featuring superwoman baker Yoke Mardewi , who has developed her own proper gluten-free bread flours that not only makes gluten free sourdough, but now a new cake flour that can make superb scones. It's life changing.
All the "Back to School" hype of the last couple of weeks led me back to the cookbooks and trolling the internet for some healthy style snacks for the lunch boxes. One of my sons tends to be a "grazer" so I figured some light bread style muffins filled with vegetables from the garden might be just what was needed.
I have to say I'm on a real porridge kick lately, after discovering and feeling first-hand the benefits of buckwheat grains. By "activating" the grains overnight, it provides a lovely nutty flavour thats high in amino acids, great for your tummy and serotonin levels, meaning it actually does make you feel full and happy!
